Serving temperature and food pairing: 16 - 18°C perfect with a multitude of dishes, not limited to tomato-based or bolognese pasta, salumi, grilled white meat.
Spontaneous fermentation and produced only during the best years. Aged in barrel for 18 months, then further aging in bottle. Minimal added sulfur, no filtering or fining. Ageing first takes place in stainless steel vats for 6 months and then in barrels for another 12 months, before 6 months in bottle.

Paterna is a commune-collective-coop winery and fully functioning farm. In 1985 a small group of friends sought refuge from the encroaching tourism market that we know today as Tuscany. They began with a couple hectares of land and a dilapidated farm house.
The farm has been certified organic since its foundation in 1985 and goes beyond that by working completely naturally both in the vineyard and cellars. All fermentations are carried out without added yeasts and little, and more often zero, sulfur is used. Much of the winemaking takes place outdoors in cement vats without temperature control.
